1 small banana, peeled
1 medium egg
2 egg whites
25g protein powder, vanilla
20g ground flaxseed
25g 70% dark chocolate chips
1 tsp coconut oil
40g yoghurt, such as Greek, natural, soya

Step 1
Whizz up the banana, egg, egg whites,
protein powder and flaxseed in a liquidiser until smooth. If the
mixture is a little thick, add a splash of water. Pour into a bowl
and stir in most of the chocolate chips.
Step 2
Melt the coconut oil in a frying pan
and fry large spoonfuls of the batter for 1 minute, then flip and
cook for a further 30 seconds. Repeat with the remaining batter
then stack up, top with the yoghurt and scatter over the remaining
chocolate chips.
